I intended for this to be a sort of starter but it’s way too filling for that. Serve it with a salad and some garlic bread as a main course, I reckon.
Not your typical stir fry, this one is sort of minty and herby and full of squeaky cheese. I made it out of odds and ends from last week’s veg box – your own leftovers may vary, but I certainly recommend trying something like this with halloumi and any old combination of veg.
